Elevate your beans with flavorful refried black beans - simply fry and mash cooked black beans with delicious seasonings.
Ingredients:
  • Ingredients for cooking the dry beans:
  • 1 pound dry black beans
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 large white onion, chopped (about 1 1/2 cups)
  • 1 garlic clove, minced
  • 2 teaspoons salt
  • 1/2 cup chopped fresh cilantro (leaves and tender stems)
  • Additional ingredients for frying the beans after they've been cooked:
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon chili powder
  • Green onion
  • Cilantro
  • Crumbled cotija or queso fresco cheese (omit for vegan version)
  • Tortilla chips or corn tortillas
Instructions:
  • For perfectly cooked beans: In a bowl, cover dry black beans with water by two inches. Let soak overnight. If short on time, cover beans with boiling water in a large bowl, ensuring at least an inch of water above them. Let sit for one hour. Add 1 1/2 teaspoons of salt to 2 quarts of water if beans are old or tough. Salt helps them soften during cooking.
  • Heat a tablespoon of olive oil in a large pot over medium-high heat. Add cumin and sauté until sizzling, then add onion. Cook until translucent, about 5 minutes. Stir in garlic and cook for another minute.
  • After draining the soaked beans, add them along with 2 quarts of water to the onions. Bring to a simmer, partially cover the pot, and simmer for 2 hours.
  • Stir in 2 teaspoons of salt and 1/2 cup chopped fresh cilantro after simmering for 2 hours. Cook uncovered for 30 more minutes until beans are tender. Taste and adjust salt if needed.
  • In a large frying pan over medium-high heat, heat 2 tablespoons of olive oil. Add chipotle powder, chili powder, and cumin, allowing the spices to sizzle. Introduce the chopped white onion and cook until translucent. Finally, add the garlic and cook for an additional minute.
  • Enhance the texture: Transfer the cooked black beans along with their liquid to the frying pan. Utilize a potato masher to gently mash the beans. Allow them to simmer for an additional 3 to 4 minutes. If the beans are too runny, continue cooking to thicken. If too thick, stir in additional water as needed. Season according to your preference.
  • Garnish the dish with chopped green onions, fresh cilantro, and crumbled cotija or queso fresco cheese. Serve with tortilla chips or corn or flour tortillas. Enjoy in tacos, burritos, as a dip, or as a side with steak. If you enjoyed the recipe, please rate and comment below.
