Cheesy refried beans with black beans and kidney beans, perfect for parties or potlucks.
Ingredients:
  • 0.25 pound dry black beans
  • 0.25 pound dry red kidney beans
  • 3 tablespoons lard
  • 2 tablespoons garlic powder
  • 1 tablespoon salt
  • 1 tablespoon ground ancho chile pepper
  • 0.5 tablespoon ground cumin
  • 1 cup shredded Oaxaca cheese
Instructions:
  • Place the beans in a bowl and generously cover them with water, allowing them to soak for a minimum of 12 hours, ideally overnight.
  • On the stove, bring the pot of beans and water to a boil. Lower the heat to medium-low and simmer until the water is absorbed and the beans are soft enough to mash, approximately 2 hours.
  • Thoroughly mash the beans using a potato masher and continue to simmer for an additional hour.
  • Use an immersion blender to puree the beans until smooth. Simmer until the mixture thickens into a paste, ensuring all water has evaporated.
  • Combine milk, lard, garlic powder, salt, chile pepper, cumin, and cayenne in the pan and stir well. Cook for an additional 10 minutes.
  • Preheat your oven to 400°F (200°C) while you prepare the rest of the recipe.
  • Place the beans in a casserole dish and generously sprinkle them with savory Oaxaca cheese before covering with foil.
  • Place your dish in the oven and let the magic happen as the cheese melts beautifully in about 20 minutes. Don't forget to uncover at the 15-minute mark for that perfect golden finish. Serve right away to enjoy it at its best!
