Easy and flavorful homemade refried black beans with green chiles and seasoning, beats canned beans.
Ingredients:
  • 4 cups dry black beans
  • 1 tablespoon cooking oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup chopped green chiles
  • 1.5 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 (6 ounce) can tomato paste
  • 0.25 cup chicken broth
  • 1 tablespoon cider vinegar
  • salt to taste
Instructions:
  • In a large container, immerse black beans in cool water, ensuring they are covered by several inches. Allow to soak for 8 hours or overnight. Drain beans before using.
  • In a pot, cover beans with water and bring to a boil. Simmer over medium-low heat until beans are very tender, about 1 hour.
  • In a skillet heated over medium, sauté onion and garlic until onion is soft and translucent for about 10 minutes. Then, add black beans, green chiles, chili powder, and cumin. Cook and stir until flavors meld for about 5 minutes.
  • Puree black bean mixture in a food processor until velvety. Incorporate tomato paste, chicken broth, vinegar, and salt; blend until desired texture is achieved. Transfer back to pot and heat through for around 5 minutes.
