Refrigerator S'mores Mini Cakes

Indulge your guests with decadent mini cakes made with Golden Grahams® and Cocoa Puffs® cereals - a chocolate lover's dream dessert.
Ingredients:
  • 3/4 cup dark chocolate chips
  • 1/3 cup whipping cream
  • 1 tablespoon butter
  • 3/4 cup miniature marshmallows
  • 3/4 cup Golden Grahams™ cereal
  • 1/2 cup Cocoa Puffs™ cereal
  • 2/3 cup dark chocolate chips
Instructions:
  • Line 30 mini muffin cups with paper baking cups and coat with cooking spray. Prepare 3/4 cup of chocolate chips in a medium bowl; set aside.
  • In a small saucepan, warm 1/3 cup of heavy cream and 1 tablespoon of butter over medium heat until butter is melted and mixture starts to boil. Pour this creamy mixture over chocolate in a bowl and mix until smooth. Add 3/4 cup of marshmallows, 3/4 cup of Golden Grahams cereal, and 1/2 cup of Cocoa Puffs cereal; carefully fold until all cereal pieces are coated.
  • Evenly distribute a tablespoon of the mixture into each muffin cup and lightly press it down.
  • Place 2/3 cup chocolate chips in a small bowl. In a 1-quart saucepan over medium heat, heat 1/3 cup whipping cream and 1 tablespoon butter until butter melts and mixture boils. Pour the cream mixture over the chocolate in the bowl and stir until smooth.
  • Drizzle each mini cake with luscious melted chocolate, then use a butter knife or offset metal spatula to create a perfect smooth top. Chill for 3 hours or until firm. For an extra touch, garnish with toasted miniature marshmallows and crushed Golden Grahams cereal.
