Guatemalan snack: Sweetened black beans in mashed plantain, fried to perfection.
Ingredients:
  • 6 plantains, peeled and broken into chunks
  • 1 (16 ounce) can refried black beans
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 quart oil for frying
Instructions:
  • In a large pot, cover the plantains with water and bring to a boil. Simmer until tender for about 15 minutes. Drain and mash.
  • Warm up refried beans in a small saucepan over gentle heat. Mix in sugar and salt until combined. Take off the heat.
  • Take a palm-sized portion of mashed plantains and shape it into a ball. Flatten it, add approximately a teaspoon of bean mixture in the center, and then encase the beans by molding the plantain around them to create an egg-shaped ball.
  • Before adding your delicious creation to the hot oil, ensure that it reaches a temperature of 375 degrees F (190 degrees C) by using a deep fryer or large skillet. To test if it's ready, drop a small amount of batter into the oil - it should sizzle and turn golden brown.
  • Fry the rellenitos in hot oil until they are golden brown, then transfer them to paper towels to drain.
