Chile Rellenos Grilled Cheese with Chipotle Honey Ketchup

Indulge in a cheesy chile rellenos grilled cheese. Choose your bread preference and savor the delicious debate. Enjoy the ultimate comfort food fusion!
Ingredients:
  • 1/3 cup ketchup
  • 2 tablespoons honey
  • 1 to 2 teaspoons finely chopped chipotle chiles in adobo sauce (from 7-oz can)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 cup shredded pepper Jack cheese (4 oz)
  • 8 slices white or whole wheat bread
  • 2 cans (7 oz) Old El Paso™ Chopped Green Chiles
  • 1/3 cup butter, softened
  • Food Should Taste Good® blue corn tortilla chips
Instructions:
  • Combine the Chipotle Honey Ketchup ingredients in a small bowl and set aside.
  • Combine the cheeses in a medium bowl. Spread 1/2 cup of cheese onto each of 4 bread slices. Place 2 pieces of green chiles on each bread slice and cover with the remaining bread. Spread 2 teaspoons of butter over the top of each sandwich.
  • In a 12-inch skillet over medium heat, place the sandwiches with the buttered side down. Spread the remaining butter over the top slices of bread. Cook uncovered for about 5 minutes until the bottoms are golden brown. Flip the sandwiches and cook for an additional 2 to 3 minutes until both sides are golden brown and the cheese is melted. Serve with Chipotle Honey Ketchup and chips.
