Spicy Indonesian-inspired curry paste with fresh chili heat.
Ingredients:
  • 1 brown onion, coarsely chopped
  • 3 long fresh red chillies, seeded, coarsely chopped
  • 3 small fresh red chillies, seeded, coarsely chopped
  • 1 stem lemon grass, pale section only, finely chopped
  • 3 garlic cloves, crushed
  • 2 tsp tamarind puree
  • 2 tsp finely grated fresh ginger
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 1 tsp turmeric
  • 1.20 gm salt
Instructions:
  • In a blender, puree the onion, chili, lemongrass, garlic, tamarind, ginger, coriander, cumin, turmeric, and salt until smooth.
