Nostalgic peanut butter bars with a nostalgic school cafeteria twist.
Ingredients:
  • 1.125 cups white sugar
  • 1.125 cups brown sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 0.75 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1.6666667461395 cups rolled oats
  • 1 teaspoon baking soda
  • 2 cups powdered sugar
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons milk, or more as needed
  • 2 tablespoons peanut butter
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 15x10-inch baking pan.
  • Combine white sugar, brown sugar, butter, and eggs in a mixing bowl until creamy. Stir in peanut butter and vanilla extract. Mix in flour until well blended. Fold in oats, baking soda, and salt until fully combined. Spread the mixture into the prepared pan.
  • Bake until golden and edges pull away from pan, around 20 minutes. Let cool at room temperature or chill in fridge for about 30 minutes before serving.
  • After the bars have cooled, combine powdered sugar, butter, milk, and peanut butter in a bowl. Adjust the consistency by adding more milk as needed. Spread the frosting over the cooled bars and cut into 20 pieces.
