Reuben sandwiches with corned beef

Celebrate fresh produce with a sandwich filled with juicy beef, rich cheese, creamy Thousand Island sauce, and crunchy cabbage.
Ingredients:
  • 1.5kg corned beef silverside (eye round or point end brisket)
  • 6 bay leaves
  • 12 peppercorns
  • 3 cloves
  • 82.50 ml malt vinegar
  • 90.00 gm brown sugar
  • 132.50 gm Thousand Island dressing
  • 8 slices fresh rye sourdough bread
  • 8 thin slices Swiss cheese or provolone
  • 250.00 ml finely shredded red cabbage
  • 20.00 ml chopped chives
  • 96.53 gm Dijon or wholegrain mustard
  • 20g butter
  • Dill pickles, to serve
Instructions:
  • In a large saucepan, combine beef, bay leaves, peppercorns, cloves, vinegar, and sugar. Cover with cold water and bring to a boil. Skim off any impurities. Simmer on low for 1½ hours until beef is tender. Cool in the liquid for 30 minutes before serving.
  • Thinly slice the beef across the grain to create approximately 12 slices for 4 sandwiches. Reserve the remaining beef by wrapping it and storing it in the fridge for up to 3 days. This recipe yields enough corned beef for 12 sandwiches.
  • Spread a generous 1½ tbsp of creamy Thousand Island dressing over half of the bread slices. Layer on the gooey cheese, savory corned beef, and a mixture of vibrant red cabbage and fragrant chives. Finally, slather the remaining bread slices with tangy mustard and top off your creations for a flavorful finish.
  • First, melt the butter in a hot frying pan until it sizzles lightly. Then, lower the heat to medium, and cook the sandwiches for about 3 minutes on each side until they turn a beautiful golden brown and the cheese inside is perfectly melted. Finally, serve the sandwiches hot alongside some pickles for a tasty combination.
