Ingredients:
  • 1 bunch rhubarb, leaves discarded, ends trimmed
  • 20.00 gm caster sugar
  • 1.25 gm ground cinnamon
  • 425g can pie apple
  • 250g punnet strawberries, hulled, halved
  • 125.00 ml untoasted muesli
  • 45.00 gm brown sugar
  • 40.00 gm reduced-fat spread
Instructions:
  • Preheat the oven to 180°C and lightly grease a 5-cup ovenproof baking dish. Cut the rhubarb into 4cm pieces, wash it, then place it in a shallow, microwave-safe dish. Add sugar and cinnamon, toss together, and microwave on HIGH for 3 minutes until tender. Spoon the mixture into the prepared baking dish.
  • Fold the apples and strawberries into the rhubarb mixture with care.
  • Combine muesli, flour, sugar, and spread in a bowl. Use your fingertips to gently mix the spread into the muesli mixture until crumbly. Sprinkle the mixture over the fruit.
  • Spread the crumble mixture evenly on a baking tray. Bake until the topping turns golden brown, about 15-20 minutes.
