Rhubarb, berry and orange crumbles

Indulge in a delightful winter dish bursting with fresh flavors.
Ingredients:
  • 2 Eve apples, peeled, cored, chopped
  • Juice of 1 orange
  • 90.00 gm brown sugar
  • Bunch rhubarb, trimmed, thickly sliced
  • 250g Brand Frozen Mixed Berries
  • 82.50 ml plain flour
  • 1 tsp orange rind
  • 1.25 gm Brand Ground Cinnamon
  • 60g butter, chopped
  • 33.00 gm rolled oats
  • 62.50 ml chopped Pecans
  • Double cream or natural yoghurt, to serve
Instructions:
  • Preheat your oven to 200C (180C for fan-forced). In a saucepan, simmer apple, orange juice, and half the sugar over medium-high heat for 3 minutes. Add rhubarb and cook for an additional 2 minutes until just tender. Take off the heat, stir in the berries, and portion the mixture into 6 greased 1-cup ovenproof ramekins.
  • In a large bowl, combine flour, orange rind, cinnamon, and remaining sugar. Use your fingertips to rub in butter until the mixture resembles breadcrumbs and starts to clump. Stir in oats and pecans, then sprinkle over the fruit. Bake for 25 minutes, or until bubbly and the top is golden and crunchy. Serve with cream or yogurt.
