Easy rhubarb almond bars for a perfect brunch treat, with a delicious flavor and texture from almond meal.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.33333334326744 cup cold butter
  • 0.25 cup white sugar
  • 1.25 cups finely chopped fresh rhubarb
  • 0.25 cup almond meal
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Combine flour, butter, and 1/4 cup sugar in a food processor until mixture resembles crumbs; press into bottom of a 9x9-inch baking pan.
  • Bake until beautifully golden for around 15 minutes in the preheated oven.
  • Combine rhubarb, egg, 1/4 cup sugar, and almond meal in a bowl, stirring until well mixed. Spread the mixture over the crust.
  • Bake until bubbly in a preheated oven for approximately 30 minutes.
  • Allow the bars to cool to room temperature on a wire rack before cutting.
