Rhubarb almond muffins infused with aromatic almond extract, bursting with diced rhubarb - an effortless breakfast treat ready in just 30 minutes.
Ingredients:
  • 1/3 cup milk
  • 1/4 cup oil
  • 1/4 cup white sugar, plus more for sprinkling tops
  • 1/4 cup brown sugar
  • 1 1/2 cup all purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon almond extract
  • 1 1/3 cup diced rhubarb
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease a 12-cup muffin tin or line with paper liners.
  • Combine milk, oil, egg, white sugar, brown sugar, and almond extract in one bowl. In another bowl, mix flour, baking powder, and salt. Create a well in the dry ingredients, pour in the wet mixture, and mix until just combined. Gently add rhubarb and stir. Fill muffin cups 3/4 full with batter.
  • Bake in the preheated oven for 20 to 25 minutes or until a toothpick inserted near the center comes out clean. Sprinkle the tops with sugar while still hot.
