Sweetened rhubarb topped with a buttery oat crumble, a quick and cozy dessert ready in under an hour.
Ingredients:
  • 3 cups diced rhubarb
  • 1.25 cups white sugar
  • 2 tablespoons all-purpose flour
  • 1 large egg
  • 1.5 cups all-purpose flour
  • 1 cup packed light brown sugar
  • 1 cup quick-cooking oats
  • 1 cup butter
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Mix together the rhubarb, white sugar, 2 tablespoons of flour, egg, and 1/2 teaspoon of cinnamon in a large bowl until everything is well coated. Transfer the rhubarb mixture to the baking dish.
  • Combine 1 1/2 cups of flour, brown sugar, oats, and 1/2 teaspoon of cinnamon in a separate bowl. Use a pastry cutter or two forks to mix in the butter until crumbly. Sprinkle the topping over the rhubarb layer.
  • Bake in the preheated oven for 40 minutes until hot and bubbling. Enjoy hot or cold.
