Ingredients:
  • 1 (9 inch) pie shell
  • 2 cups chopped rhubarb
  • 1 cup white sugar
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon ground nutmeg
  • 2 eggs, beaten
  • 4 teaspoons milk
Instructions:
  • Heat your oven to 350°F (175°C).
  • Evenly layer rhubarb on top of the uncooked pastry shell.
  • In a medium bowl, mix sugar, flour, and nutmeg until well combined. Add eggs and milk, then beat until smooth. Pour the mixture evenly over the rhubarb layer.
  • Protect the pie shell edges with aluminum foil to avoid excessive browning, then bake in the preheated oven for 50 minutes. Uncover the crust and bake for an extra 10 minutes.
