Unique twist on apple dumplings, served with a scoop of cinnamon ice cream for a delicious treat.
Ingredients:
  • 1 (12 ounce) can refrigerated buttermilk biscuit dough
  • 2 cups chopped fresh rhubarb
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1.25 teaspoons vanilla extract
  • 0.25 teaspoon ground cinnamon, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • Take the biscuits out of the can and press each one into a 3-inch circle. Add a heaping tablespoon of chopped rhubarb to the center of each circle. Fold the dough around the rhubarb and pinch to seal. Arrange the dumplings seam side down in a 9x13 inch baking dish. Mix sugar, water, butter, and vanilla in a medium bowl or large measuring cup. Pour the mixture over the dumplings and sprinkle with cinnamon.
  • Bake in the preheated oven for 35 to 40 minutes until the biscuits are beautifully golden brown.
