Rice and Beef Stuffed Tomatoes

Beef and rice stuffed tomatoes - a quick and flavorful main dish.
Ingredients:
  • 7 tomatoes
  • 1 cup instant rice
  • 1 pound lean ground beef
  • 1 yellow onion, chopped
  • 1 clove garlic, diced
  • 1 pinch garlic salt, or to taste
  • 2 (15 ounce) cans tomato sauce
  • 1 (6 fluid ounce) can tomato juice
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • Remove the tops from the tomatoes and set them aside. Scoop out the pulp into a bowl and place the hollowed tomatoes in the baking dish.
  • 1. Boil water in a saucepan until it reaches a rolling boil. 2. Remove saucepan from heat and gently stir in instant rice. 3. Cover the saucepan and allow the rice to absorb the water for approximately 5 minutes.
  • 1. Heat a large skillet over medium-high heat. Brown and crumble beef for 5-7 minutes; drain. 2. Mix in cooked rice, onion, garlic, garlic salt, and black pepper. 3. Stir in tomato sauce and reserved tomato pulp. 4. Bring to a boil, then simmer on low for 10 minutes until thickened.
  • Stuff each tomato with the seasoned ground beef mixture, top each with a tomato lid, and drizzle tomato juice over them for added juiciness.
  • Cook in the oven until the tomatoes are tender and the filling is piping hot, approximately 20 minutes.
