Gluten-free pancake batter made with rice flour.
Ingredients:
  • 0.5 cup milk
  • 1 tablespoon vegetable oil
  • 1 cup rice flour
Instructions:
  • In a mixing bowl, whisk together eggs, milk, vegetable oil, and salt until smooth. Gradually add rice flour, whisking until no dry lumps remain. Cover the bowl and let it rest at room temperature for 1 hour or refrigerate overnight.
  • Preheat a lightly-oiled griddle over medium-high heat. Spoon large dollops of batter onto the griddle and cook until bubbles form and edges are dry. Flip and cook until golden brown. Repeat with remaining batter as needed.
