Rich Italian lamb shanks

Italian-style lamb shanks with fragrant herbs and sweet marsala for a sensational family meal.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 6 French-trimmed lamb shanks
  • 2 red onions, chopped
  • 2 red capsicum, chopped
  • 4 sprigs fresh lemon thyme
  • 3 sprigs fresh rosemary
  • 69.38 gm tomato paste
  • 187.50 ml marsala (see notes)
  • 446.25 gm chicken style liquid stock
  • 410g can crushed tomatoes
  • 230g jar pitted green Sicilian olives, drained
  • 2 x 400g cans cannellini beans, drained, rinsed
  • Fresh flat-leaf parsley sprigs, to serve
Instructions:
  • In a large heavy-based saucepan over medium-high heat, brown the shanks in 2 batches for 5 to 6 minutes until they are golden all over. Remove them to a plate.
  • Sauté onion and capsicum in a pan until onion softens. Add garlic, lemon thyme, rosemary, and tomato paste, cooking briefly. Pour in marsala and simmer until reduced by half. Finally, add stock and tomatoes, and stir to combine.
  • Place the shanks back in the pan, making sure they are well coated in the mixture. Cover the pan and bring it to a boil. Once boiling, reduce the heat to low and simmer the shanks, turning them every hour, for 2 hours and 30 minutes, or until they are tender. Remove the lid, then add the olives and beans. Simmer without the lid for another 30 minutes. Finish by sprinkling with fresh parsley before serving.
