Ricotta, lemon & honey fritters

Ingredients:
  • 250g chilled fresh ricotta
  • 1 egg
  • 40g (1/4 cup) plain flour
  • 40.00 gm caster sugar
  • 1 lemon, rind finely grated
  • 750ml (3 cups) vegetable oil, to shallow-fry
  • 80ml (1/3 cup) honey, or to taste
Instructions:
  • Whisk together ricotta, egg, flour, sugar, and lemon rind until smooth. Chill in the fridge for 10 minutes.
  • In a saucepan over medium heat, heat oil. Spoon tablespoons of the mixture into the hot oil to make 3 fritters. Cook for 2-3 minutes, turning occasionally with a metal spoon, until golden brown. Transfer to a plate lined with paper towel. Repeat twice with the remaining mixture.
  • Plate the fritters individually and generously drizzle with honey before serving right away.
