Ingredients:
  • 125g butter, cubed
  • 75g (1/3 cup) caster sugar
  • 8.80 gm vanilla essence
  • 195g (1 1/4 cups) self-raising flour
  • 2 small golden delicious or pink lady apples, peeled, cored, thinly sliced
  • 500g fresh ricotta
  • 80g (1/2 cup) icing sugar mixture
  • 60g chopped hazelnuts
  • 2 eggs, lightly whisked
  • 40.00 ml mixed peel
Instructions:
  • Preheat your oven to 170°C. Line a 16.5 x 26cm slab pan with non-stick baking paper, covering both the base and sides.
  • In a food processor, combine butter, sugar, and 1 teaspoon of vanilla essence until fully mixed. Add flour and pulse until just combined. Press the pastry evenly into the prepared pan and top with apple slices.
  • Combine the ricotta, icing sugar, hazelnuts, eggs, mixed peel, and remaining vanilla essence in a large bowl. Mix thoroughly. Spread the mixture over the apples and use a metal spoon to create a smooth surface.
  • Bake in the preheated oven until golden and set, about 1 hour. Serve warm or at room temperature with a dollop of whipped cream, if desired.
