Ricotta and mint fritters

Quick and simple ricotta and mint fritters - perfect for any weeknight!
Ingredients:
  • 500g fresh ricotta
  • 25g parmesan
  • 1/2 tespoon dried mint
  • 62.50 ml mint leaves, chopped
  • 100g baby spinach
  • 1 garlic clove, crushed
  • 50g plain flour
  • 125ml olive oil
  • 11.80 gm wholegrain mustard
  • 20.00 ml apple cider vinegar
  • 500.00 ml sugar snap peas, blanched, refreshed
  • 500.00 ml watercress sprigs
  • 1 avocado, cut into wedges
  • Micro cress, to serve
  • Fresh mint leaves, to serve
Instructions:
  • Combine ricotta, parmesan (or vegetarian hard cheese), dried and fresh mint, spinach, garlic, egg, and flour in a bowl. Season generously and mix well until fully combined.
  • In a large frypan over medium heat, warm up 1/3 cup (80ml) oil. Shape 2 tablespoons of ricotta mixture into balls using floured hands. Flatten slightly, then cook in batches for 5 minutes until golden and crisp, turning once. Keep warm and repeat with the rest of the ricotta mixture.
  • In a bowl, combine mustard, vinegar, and the remaining 2 tablespoons of oil. Season to taste.
  • Plate fritters, peas, fresh mint, watercress, and avocado beautifully. Drizzle with dressing and sprinkle with micro cress before serving.
