Deliciously simple Ricotta and Summer Berry Parfaits - a delightful summer dessert with creamy ricotta and fresh berries. Perfect for entertaining guests.
Ingredients:
  • 4 ounces cream cheese, cut into chunks and softened to room temperature
  • 2 tablespoons honey
  • 2 teaspoons lemon zest, finely grated
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla
  • 1 1/2 cups (12 ounces) whole milk ricotta cheese
  • 3 tablespoons strawberry jam
  • 4 cups mixed fresh berries, such as blueberries, raspberries, blackberries, and sliced strawberries
  • 2 tablespoons pistachios, chopped (for garnish)
  • Mint leaves (for garnish)
Instructions:
  • To create the ricotta cream, mix cream cheese, honey, lemon zest, 1 tablespoon lemon juice, and vanilla in a bowl. Use an electric mixer on medium speed for 1 to 2 minutes until fluffy. Then, blend in the ricotta until smooth.
  • Strain the jam into a bowl, mix with lemon juice, then coat the berries.
  • Create the parfaits by alternating layers of 1 to 2 tablespoons of berries and 2 to 3 tablespoons of ricotta mixture in four dessert glasses or bowls. Finish with a layer of berries on top. Before serving, top with chopped pistachios and garnish with mint leaves. For best results, refrigerate the prepared dishes with the fruit and ricotta for up to a day, then add the pistachios and mint just before serving.
