Grilled maple peaches with ricotta and pepper - a sweet and savory summer treat!
Ingredients:
  • 3 yellow peaches, halved, stoned
  • 3 white peaches, halved, stoned
  • 54.00 gm maple syrup
  • 20.00 ml rosemary sprigs
  • 6 sprigs thyme
  • Extra virgin olive oil, to drizzle
  • 200g reduced-fat smooth ricotta
Instructions:
  • Preheat your oven to 180°C and prepare a large baking tray by lining it with parchment paper.
  • Prepare the barbecue grill or chargrill by lightly brushing it with oil and heating it to medium-high. Brush the peach halves, cut-side up, with maple syrup, then grill for 2 mins until lightly charred.
  • Place the peaches onto the prepared tray and generously season them with fresh rosemary, thyme sprigs, and black pepper. Drizzle a touch of oil over the top. Bake in the oven for 5-7 minutes, or until the peaches are gently softened and warmed.
  • Spread a generous dollop of creamy ricotta over the juicy peaches, then sprinkle with a touch of freshly ground black pepper. Enjoy immediately.
