French toast with ricotta and maple syrup

Elevate your family favorite with creamy ricotta and sweet maple syrup.
Ingredients:
  • 500g fresh ricotta
  • 24.00 gm icing sugar
  • 1 tsp finely grated orange rind
  • 4 (about 280g) bought hot cross buns
  • 125ml (1/2 cup) milk
  • 3 eggs, at room temperature
  • 20g (1 tbsp) butter
  • Maple syrup, to serve
Instructions:
  • Beat together ricotta, icing sugar, and orange rind with electric beaters until smooth. Set aside.
  • Cut each bun into three vertical slices. Combine milk and eggs in a medium bowl, whisking until smooth.
  • In a large non-stick frying pan over medium-high heat, melt half of the butter. Dip half of the bun slices in the egg mixture for 20 seconds, then remove, allowing excess egg mixture to drain off. Cook the slices in the frying pan for 1-2 minutes per side until golden. Transfer to a plate and loosely cover with foil to keep warm. Repeat the process with the remaining butter, bun slices, and egg mixture.
  • Spread the ricotta mixture generously on the French toast slices. Serve 3 slices per plate and top with a generous drizzle of maple syrup.
