Flavorful omelette with ricotta & peppercorns is simple yet satisfying.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 200g ricotta, sliced or in chunks
  • 1/2 tsp coarsely ground mixed peppercorns (white, black and pink)
  • 3 large free-range eggs
  • Thyme, to garnish (optional)
Instructions:
  • - Heat oil in a frypan over medium heat. Add ricotta and sprinkle with peppercorns, cook briefly. - Whisk eggs lightly with a dash of cold water and a couple of pinches of salt in a bowl. Pour around the ricotta. - Reduce heat to low, cook until eggs are just cooked. - Garnish with thyme. Serve with a green salad and crusty bread.
