Flaky puff pastry filled with creamy ricotta and sweet glazed fruit.
Ingredients:
  • 250g fresh ricotta
  • 50g dark chocolate, chopped
  • 100g mixed glace fruits, roughly chopped
  • 100g icing sugar
  • 40.00 ml grappa* (optional)
  • 375g block puff pastry, thawed
  • 1 egg, beaten, to glaze
  • Flaked almonds, to sprinkle
Instructions:
  • Preheat your oven to 180C and prepare a large baking tray by lining it with baking paper.
  • Combine ricotta, chocolate, glace fruits, icing sugar, and grappa (if using) in a food processor. Pulse until smooth. Set aside.
  • Roll out the pastry into a 20cm x 30cm rectangle and place it on the tray. Spread the ricotta mixture down the middle of the pastry, leaving 10cm on both long sides. Fold in both sides so they meet just at the edge of the filling. Press down to seal the ends, then brush the exposed pastry with beaten egg and sprinkle almonds all over.
  • Bake for 20-25 minutes until pastry is golden, then cool slightly and generously dust with icing sugar.
