Ricotta Spaghetti

Vegetarian spaghetti with creamy ricotta and basil is a gourmet twist on classic mac and cheese!
Ingredients:
  • 0.75 pound spaghetti
  • 1 cup part-skim ricotta cheese
  • 2 teaspoons chopped fresh basil
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • In a large pot, bring salted water to a rolling boil. Add spaghetti and boil until al dente, about 12 minutes. Drain in a colander over the sink, saving 2 tablespoons of cooking water.
  • Heat garlic, ricotta, and basil in a saucepan over medium-low heat for 4 minutes until hot. Season with salt and pepper, add spaghetti and reserved cooking water. Serve sprinkled with Parmesan cheese.
