Whip up a delicious rice and vegetable dish in just 30 minutes!
Ingredients:
  • 250g rice
  • 18.20 gm olive oil
  • 60.00 ml pine nuts
  • 2 garlic cloves, thinly sliced
  • 4 spring onions, finely chopped
  • 375ml chicken stock
  • 2 roasted red capsicums, cut into strips
  • Juice of 1 lemon
  • 1 small zucchini, cut into ribbons using a vegetable peeler
  • Shaved parmesan (optional), to serve
Instructions:
  • Boil the rice in salted water until al dente, then drain thoroughly.
  • In a large, deep frypan over medium heat, heat olive oil, cook pine nuts until golden, then add garlic and spring onion for 1 minute. Pour in stock and bring to a simmer. Add capsicum, lemon juice, zucchini, and rice. Season to taste and cook until heated through. Serve in bowls and top with shaved parmesan and black pepper, if desired.
