Transform leftover rice into a delicious chicken and pea stir-fry.
Ingredients:
  • 18.20 gm olive oil
  • 1 small onion, roughly chopped
  • Sprig of sage,
  • 40.00 ml whole small sage leaves
  • 325g skinless smoked chicken breast (about 2 fillets)
  • 500ml chicken stock
  • 500.00 ml frozen peas
  • 600.00 gm cooked medium-grain rice (600.00 gm uncooked)
  • 62.50 ml grated parmesan cheese, plus extra shaved parmesan to serve
  • Lemon wedges, to serve
Instructions:
  • Heat the olive oil in a deep frypan over medium-low heat, then sauté the onion and sage until the onion is softened, about 5-8 minutes.
  • Using 2 forks, shred the chicken.
  • Pour the stock over the onions and bring to a gentle simmer. Toss in the peas, chicken, and rice. Cook for 1-2 minutes until heated through, ensuring everything is well combined. Take the pot off the heat and gently fold in the whole sage leaves and grated parmesan.
  • Garnish with a squeeze of fresh lemon juice and a sprinkle of shaved Parmesan before serving.
