Create a quick and delicious bowl of spring vegetable risoni in no time.
Ingredients:
  • 330g risoni
  • 150g snow peas, trimmed, thinly sliced lengthways, or green beans, trimmed, halved crossways
  • 1 bunch asparagus, woody ends trimmed, cut into 4cm lengths
  • 6 yellow squash, quartered
  • 100g baby spinach leaves
  • 42.00 gm lemon juice
  • 18.20 gm olive oil
  • 125g goat’s cheese, coarsely crumbled
  • 82.50 ml basil leaves
Instructions:
  • Boil risoni in a large saucepan of water according to package instructions until just tender. Add vegetables for the last 3 minutes of cooking. Drain, rinse under cold water, and return to the pan.
  • Combine the spinach, lemon juice, oil, and half of the goat's cheese with the risoni mixture in the pan. Gently toss everything together and season to taste.
  • Distribute into individual bowls and garnish with fresh basil and the rest of the goat's cheese.
