Risoni with capers, lemon & parsley

Tasty pasta salad with zesty dressing and flavorful capers.
Ingredients:
  • 21.00 gm fresh lemon juice
  • 9.20 gm olive oil
  • 2 tsp white wine vinegar
  • Pinch of caster sugar
  • 305g (1 1/2 cups) dried risoni pasta
  • 4 shallots, ends trimmed, thinly sliced
  • 30.00 ml baby salted capers, rinsed, coarsely chopped
  • 125.00 ml fresh continental parsley leaves
Instructions:
  • Whisk lemon juice, olive oil, vinegar, and sugar together in a small bowl using a fork until well combined.
  • Prepare the risoni by cooking it in a generously salted large saucepan of boiling water for 8 minutes or until it reaches the perfect al dente consistency. Once cooked, rinse the risoni under cold running water and drain thoroughly.
  • In a large bowl, mix the risoni, shallot, capers, and parsley together. Drizzle the dressing on top and gently toss everything together. Season with pepper and serve right away.
