Deliciously unique pasta with spinach, ricotta, and smoked fish in risoni.
Ingredients:
  • 500g dried risoni pasta
  • 2 x 180g smoked salmon portions, flaked
  • 1 small bunch English spinach, trimmed, coarsely chopped
  • 3 tsp finely grated lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • 2 shallots, trimmed, thinly sliced
  • 200g reduced-fat ricotta, crumbled
Instructions:
  • Boil pasta in generously salted water until perfectly al dente. Drain and transfer back to the pan.
  • Combine the salmon, oil, spinach, garlic, lemon zest, lemon juice, and shallot with the pasta, tossing until fully mixed.
  • Serve the risoni mixture in individual bowls, dollop with ricotta, and sprinkle with salt and pepper to taste.
