Kid-friendly beef and spinach casserole with melted mozzarella - simple, tasty, and nourishing!
Ingredients:
  • 1 pound ground beef
  • 1 (15 ounce) can tomato sauce
  • 1 cup sour cream
  • 1 teaspoon dried thyme
  • 3.5 cups farfalle (bow tie) pasta, uncooked
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then boil lightly salted water in a pan. Cook the pasta until tender, approximately 8 minutes.
  • Add ground beef to a skillet on medium-high heat, breaking it up as it cooks. Stir consistently until nicely browned. Remove any excess grease, then mix in tomato sauce, sour cream, and thyme.
  • Spread the cooked pasta evenly in a 2 quart casserole dish. Pour the flavorful ground beef mixture on top of the pasta. Layer with fresh spinach and generously sprinkle with shredded cheese.
  • Bake for 30 minutes in the preheated oven until golden brown and heated through.
