Elevate roast beef with zesty tomato dressing for an unforgettable dish.
Ingredients:
  • 2 (about 1kg each) beef eye fillets
  • 18.20 gm olive oil
  • Salt & freshly ground black pepper
  • 750.00 ml firmly packed fresh basil leaves
  • 250ml (1 cup) extra virgin olive oil
  • 3 vine-ripened tomatoes, deseeded, finely diced
Instructions:
  • For a delightful basil & tomato dressing, start by placing the basil in a food processor. With the processor running, slowly pour in the oil until smooth. Strain the mixture through muslin cloth and let it sit for 3 hours. Combine the basil oil with diced tomatoes, season with salt and pepper, cover, and set aside.
  • Preheat your oven to 220°C. Place each beef fillet on a clean surface, fold the thinnest part (tail end) underneath, and tie at 6cm intervals with unwaxed white string to maintain its shape. Repeat with the rest of the beef fillets.
  • In a large frying pan, heat extra virgin olive oil over high heat. Sear 1 beef fillet, turning often, for 2 minutes until browned. Transfer to a large roasting pan. Repeat with the remaining beef.
  • Season the beef generously with salt and pepper, then roast in a preheated oven for 25-30 minutes for medium doneness or until cooked to your liking. Once done, remove from the oven, cover it loosely with foil, and let it rest for 15 minutes before serving.
  • Thinly slice the beef and generously drizzle with the flavorful basil & tomato dressing before serving.
