Rosemary-thyme roasted chicken, stuffed with grapes, onions, and lemon.
Ingredients:
  • 1 roasting chicken, about 4 to 5 pounds
  • 1 lemon, cut into thin wedges
  • Salt and pepper to taste
  • 1 onion, peeled, cut into eight wedges
  • 1 large bunch seedless grapes (about 3 cups total)
  • A few sprigs fresh rosemary, thyme, sage, and/or tarragon
  • 2 cups white wine (can substitute chicken stock)
  • Extra virgin olive oil
Instructions:
  • Allow the chicken to rest at room temperature (70°F) for a minimum of one hour to ensure it reaches near room temperature before roasting.
  • Preheat your oven to a toasty 450°F.
  • Prepare the chicken: After patting the chicken dry, coat inside and outside with olive oil, season generously with salt and pepper. Fill the cavity with halved grapes, onion wedges, fresh herbs, and lemon wedges.
  • Line the roasting pan with slices of onion and lemon wedges. Position the chicken on top of them in the pan, breast side down. Add herbs and lemon slices between the wings and body. Scatter any leftover grapes, lemon slices, and herbs around the chicken in the pan.
  • Roast the chicken at 450°F for 25 minutes. Baste with 1 cup of wine, reduce heat to 400°F, and continue cooking for 30 minutes. Baste with another cup of wine and cook for an additional 10-20 minutes until chicken reaches internal temperature of 160°F.
  • Allow the chicken to rest: Take the roast out of the oven and gently cover with foil. Let it rest for 15 minutes to allow the chicken to continue cooking through.
  • Carve the chicken: Place the chicken breast side up on a carving board. Start by removing the legs (drumstick and thigh), then detach the wings. Cut along the breast bone, separating the breast meat following the rib cage curvature. Repeat on the other side. Slice the breasts crosswise and arrange on a platter with grapes and caramelized onions. Drizzle with pan sauce before serving.
