Delicious green potato salad pairs perfectly with roast chicken.
Ingredients:
  • 750g chat potatoes
  • 150g green beans, trimmed, halved
  • 123.75 gm whole-egg mayonnaise
  • 75.00 gm basil pesto
  • 250g packet baby red capsicums, quartered, seeded
  • 1 large barbecue chicken, quartered, warmed
Instructions:
  • Boil potatoes in a large saucepan of salted water for 20 minutes. Add beans for the last 3 minutes until tender. Drain and let cool. Slice potatoes thickly.
  • In a small bowl, mix together mayonnaise and pesto. Add this mixture to the potatoes along with the bell pepper and beans. Mix everything together well. Serve the chicken with the salad.
