Succulent rosemary roasted chicken, stuffed with onions and herbs, reminiscent of authentic Italian market flavors.
Ingredients:
  • 1 (3 pound) whole chicken, rinsed
  • salt and pepper to taste
  • 1 small onion, quartered
  • 0.25 cup chopped fresh rosemary
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Season the chicken generously with salt and pepper, making sure to season the cavity as well. Fill the cavity with onion and rosemary before placing the chicken in a 9x13-inch baking dish or roasting pan.
  • Roast the chicken in the preheated oven for 2 to 2 1/2 hours or until no longer pink in the center and the juices run clear. Use an instant-read thermometer to ensure the temperature near the bone is at least 165°F (74°C).
