Crispy golden potatoes with creamy blue cheese sauce - a tantalizing combination that’s simply irresistible.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 21.00 gm lemon juice
  • 2kg kip er potatoes, scrubbed, halved lengthways
  • 62.50 ml chopped fresh chives
  • 125g mild blue cheese, chopped
  • 252.50 gm thickened cream
  • Mild blue cheese, chopped, crumbled to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced and lightly grease 2 large baking trays.
  • In a small bowl, mix together oil, lemon juice, and garlic. Spread potatoes on prepared trays and drizzle with the oil mixture. Season with salt and pepper, then toss to coat evenly. Roast in the oven for 45 to 50 minutes until golden and tender.
  • Prepare the Blue Cheese Sauce by combining blue cheese, parmesan, and cream in a saucepan over medium heat. Stir continuously for 5 minutes until the cheese melts and the sauce becomes smooth.
  • Place the roast potatoes elegantly on a serving platter. Drizzle with a touch of the tantalizing blue cheese sauce and sprinkle with fresh chives and additional crumbled blue cheese. Serve the extra blue cheese sauce on the side for an extra touch of indulgence.
