Tangy ruby grapefruit marinade enhances this juicy lamb dish.
Ingredients:
  • 1.5kg leg of lamb
  • 4 garlic cloves, quartered
  • 300g (3/4 cup) honey
  • 250mls (1 cup) fresh grapefruit juice (from ruby or regular grapefruit)
  • Salt & ground black pepper
  • 3 bunches spring onions, roots and stems removed
  • 3 ruby grapefruit, segmented
  • 375mls (1 1/2 cups) chicken style liquid stock
  • Roasted small potatoes, to serve
  • Steamed broccoli (optional), to serve
Instructions:
  • Heat your oven to 180°C.
  • Create shallow incisions in the lamb using a sharp knife, then tuck the garlic quarters into the cuts. Transfer the lamb to a roasting pan.
  • Mix the honey and grapefruit juice until well combined. Coat the lamb generously with the mixture and season with salt and pepper.
  • Roast the lamb in the oven at 375°F for 45 minutes, brushing with pan juices and grapefruit juice every 15 minutes. Toss in spring onions and continue roasting for 35 minutes, basting every 15 minutes. Finally, add ruby grapefruit segments and roast for an additional 10 minutes.
  • Take the pan out of the oven and place the lamb, spring onions, and grapefruit segments on a warm platter. Cover loosely with foil and let it rest in a warm spot for at least 10 minutes.
  • Next, delicately remove any excess fat from the top of the juices in the roasting pan. Pour in the stock and season with salt and pepper. Heat on the stove until boiling, then lower the heat and simmer, leaving it uncovered, while stirring occasionally. Cook for 5 minutes, or until the liquid reduces by one-third. Serve the roast lamb with the flavorful spring onions and zesty grapefruit sauce. Pair with potatoes and broccoli, if preferred.
