Effortless dinner: Marinate chicken, lay on veggies, bake. Ready in under an hour - a delicious complete meal awaits.
Ingredients:
  • 2 lemons, rind finely grated, juiced
  • 36.40 gm olive oil
  • 40.00 ml rosemary leaves, chopped
  • 3 garlic cloves, crushed
  • 4 chicken Marylands
  • 3 zucchini, halved lengthwise, quartered
  • 2 large parsnips, peeled, quartered
  • 1 large red capsicum, deseeded, sliced
  • 2 red onions, peeled, cut into wedges
  • 400g chat potatoes, halved
Instructions:
  • Preheat the oven to 210°C. In a large bowl, mix together lemon rind, lemon juice, oil, rosemary, and garlic. Add the chicken and make sure it is well coated in the mixture.
  • Toss vegetables in a roasting pan and nestle chicken on top. Drizzle over the remaining oil mixture and generously season with salt and pepper.
  • Roast the chicken and vegetables for 40 minutes. Then transfer the chicken to a plate, cover it, and continue roasting the vegetables for an additional 10 minutes.
  • Arrange chicken and vegetables beautifully on plates. Drizzle the delicious pan juices generously over the top. Serve and enjoy!
