Ingredients:
  • 1 1.7kg (size 17) chicken
  • 1 lemon, quartered
  • 30g (1 1/2 tbsp) butter, at room temperature
  • 20.00 ml chopped fresh sage
  • Salt & ground black pepper, to taste
  • 1 lemon, extra, sliced
Instructions:
  • Preheat your oven to a piping hot 230°C.
  • Rinse the chicken cavity under cold water and pat dry with paper towel. Fill the cavity with lemon quarters.
  • In a small bowl, mix the butter and sage. Spread the seasoned butter evenly over the chicken skin and top with lemon slices.
  • Lay the chicken on a large 40 x 70cm sheet of brown paper, wrapping it securely to seal. Use wet unwaxed string to tie it up and put it in a roasting pan, breast-side up.
  • Roast in the preheated oven for 15 minutes. Then lower the oven temperature to 180°C and continue roasting for another 75 minutes, or until the thigh juices run clear when pierced with a skewer.
  • To present, place the bundled chicken on a serving platter or tray and carefully remove the string to unveil the package.
