Ingredients:
  • 8 flat mushrooms
  • 1 x 250g pkt frozen chopped-leaf spinach, thawed
  • 200g fresh ricotta
  • 20.00 ml chopped fresh oregano
  • 200g bought chargrilled red capsicum, drained well on paper towel, sliced
  • 80g (3/4 cup) coarsely grated mozzarella
Instructions:
  • Preheat the oven to 200°C. Trim mushroom stems, then place mushrooms in a roasting pan with the stems facing up. Drizzle with oil and season with salt and pepper.
  • In a bowl, mix spinach, ricotta, oregano, and garlic. Stuff each mushroom with capsicum and the spinach-ricotta mixture. Sprinkle with mozzarella and bake in a preheated oven for 15 minutes until cheese melts and mushrooms are tender.
  • Enjoy alongside perfectly grilled chicken or lamb, if desired.
