Savory spinach and mushroom stack, perfect pairing with roast beef or chicken.
Ingredients:
  • 2 tablespoons butter
  • 1 pound fresh mushrooms, sliced
  • 2 (10 ounce) packages fresh spinach, rinsed and stems removed
  • 1 teaspoon salt
  • 4 tablespoons butter, melted
  • 0.25 cup finely chopped onion
  • 1.5 cups shredded Cheddar cheese, divided
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 2 quart casserole dish.
  • In a large skillet over medium heat, melt a rich 2 tablespoons of butter until sizzling. Cook the mushrooms to tender perfection for approximately 8 to 10 minutes, releasing their earthy aroma.
  • Sauté spinach in a large pot until wilted over medium heat. Drain and gently press out excess water. Transfer to a baking dish, season with salt, drizzle with 4 tablespoons of melted butter, add onion and half of the cheese. Arrange mushrooms over the top and finish with the rest of the cheese.
  • Place in the hot oven for 20 minutes.
