Mizuna's zesty mustard flavor complements the caramelized sweetness of roasted pears.
Ingredients:
  • Olive oil, for greasing
  • 3 firm beurre bosc pears
  • 1 1/2 tsp ground coriander
  • 21.00 gm fresh lemon juice
  • 14.40 gm honey
  • 1 bunch mizuna, stems trimmed, washed, dried
  • 80g piece parmesan, shaved
Instructions:
  • Preheat your oven to 220°C. Lightly grease a medium roasting pan with oil. Peel, core, and cut the pears into eighths.
  • In a large bowl, combine pears, 1 tablespoon of oil, coriander, salt, and pepper. Transfer the mixture to a greased pan and roast in a preheated oven, turning occasionally, until the pears are golden, about 20 minutes.
  • In a small screw-top jar, combine the remaining oil, lemon juice, honey, salt, and pepper. Shake vigorously until well mixed.
  • Drizzle dressing over the pears, mizuna, and Parmesan before serving.
