Indulge in this irresistible breakfast delight!
Ingredients:
  • 8 (just-ripe) plums, halved, stone removed
  • 1 orange, zested, juiced
  • 57.20 gm honey
  • 2 fresh lemon thyme sprigs
  • 4 thick brioche slices
  • 150g goat's curd
  • Honey, extra, to serve
Instructions:
  • Preheat your oven to 180C/160C fan forced and line a shallow baking pan with baking paper. Arrange the plums, cut-side up, in the pan. Sprinkle half of the orange zest over the plums. Mix 2 tablespoons of orange juice with honey and drizzle it over the plums. Add thyme sprigs on top. Bake for 20-25 minutes, basting with pan juices, until plums are tender. Let cool on a tray.
  • Toast brioche slices until lightly golden. Spread goat’s curd on each slice and top with plum halves. Drizzle with extra honey, pan juices, and remaining orange zest before serving.
