Budget-friendly effortless roast, ideal for entertaining.
Ingredients:
  • Olive oil, to grease
  • 3kg pork leg, on the bone
  • 60ml (1/4 cup) extra virgin olive oil
  • 3 garlic cloves, crushed
  • 20.00 ml chopped fresh rosemary leaves
  • 2.40 gm salt
  • 500ml (2 cups) apple juice
  • 40.00 ml plain flour
Instructions:
  • Prepare the roasting pan by brushing it with oil for a light greasing. Score the pork rind with a sharp knife in a diamond pattern through the fat layer. In a bowl, mix oil, garlic, rosemary, salt, and pepper. Rub the oil mixture over the pork rind and flesh, then transfer to the greased pan.
  • Preheat oven to 200°C. Pour 1 cup (250ml) apple juice into the roasting pan. Roast for 20 minutes. Lower oven temperature to 180°C. Continue roasting for 1 1/2 hours for medium doneness. Transfer to a platter, cover with foil, and let rest for 20 minutes before serving.
  • While skimming off excess fat from the pan juices, place the roasting pan over medium-low heat. Combine flour, stirring well. Add the remaining apple juice and bring to a boil while stirring constantly. Cook for 2 minutes or until thickened. Stir in water, bring to a boil, and season with salt and pepper. Lastly, strain into a heated serving jug.
  • Slice the pork and crackling, then drizzle with the savory gravy before serving.
