Roast potato & avocado salad

Ingredients:
  • 1.5kg chat potatoes, halved
  • Salt
  • 2 chorizo sausages, sliced
  • 1 x 250g tub extra light sour cream
  • 23.40 gm grain mustard
  • 20.00 ml red wine vinegar
  • 2 avocados
Instructions:
  • Preheat your oven to 200°C. Arrange potatoes in a roasting pan, coat them with oil, and sprinkle with salt. Roast for 30-40 minutes until crisp and golden. Allow to cool before serving.
  • While the chorizo is frying until crisp, drain it on a paper towel. Then, mix sour cream, mustard, and vinegar in a small bowl.
  • In an airtight container, combine potatoes with dressing and gently toss to coat. Layer chorizo on top without mixing. Just before serving, peel and dice the avocado and add it to the salad.
