Crispy loaded vegetable spuds - perfect for dinner or a nutritious snack!
Ingredients:
  • 4 sweet potatoes, unpeeled
  • 400 can black beans, rinsed, drained
  • Coarsely grated cheddar, to serve
  • Plain corn chips, to serve
  • Sour cream, to serve
  • Chopped avocado, to serve
  • Chopped tomato, to serve
  • Thinly sliced long fresh red chilli, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • Roast the sweet potatoes at 180C/160C fan forced for 1 hour or until tender. Carefully halve lengthwise without fully cutting them. Scoop out the flesh, leaving the skins intact. Mash the flesh in a bowl and mix in the black beans. Season to taste.
  • Fill each shell generously with the delicious mixture, then generously sprinkle with flavorful cheddar cheese. Place under a high grill until the cheese is beautifully melted and golden. Finish by adding a satisfying layer of crunchy corn chips and toppings of creamy sour cream, chopped avocado and tomato, spicy sliced chili, and fragrant fresh coriander.
