Roast potatoes with paprika & lemon salt

Zesty seasoning enhances crispy, golden roast potatoes.
Ingredients:
  • 1.5kg Baby Coliban (Chat) potatoes (see note)
  • 27.30 gm olive oil
  • 30g butter
  • 9.60 gm salt
  • 2 tsp finely grated lemon rind
  • 2.50 gm paprika
Instructions:
  • Boil potatoes in a saucepan of water until tender, about 15 minutes. Then, drain.
  • Preheat the oven to 200°C. In a large roasting pan, combine oil and butter and melt in the oven for about 3 minutes. Add potatoes and toss to coat. Lightly crush the potatoes with a potato masher. Roast for 10 minutes until they start to brown. Mix salt, lemon rind, and paprika in a small bowl, then sprinkle over the potatoes. Roast for an additional 15 minutes until golden.
